I was out of butter so I wanted a no-butter recipe and you can easily make this recipe vegan by making a few simple changes I mention below.
You will need:
1 cup flour
1 1/4 cup oats ( I used rolled oats)
1/2 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup oil (I used olive oil)
3 teaspoon of honey
2 teaspoon vanilla extract
1 large egg
3/4 cup of chocolate chips
2 bowls, one needs to be heat resistant for your wet ingredients
** To make this recipe vegan simple exchange the honey for maple syrup and instead of an egg just increase the oil to 2/3 cup and add 2 tsp of cornstarch.
In one bowl mix the flour, oats,baking powder and salt together.
In your heat resistant bowl you want to mix and melt your oil, honey, sugar, and vanilla extract together (do not add your egg, it will be added later). I used a double boiling technique. At this point you are trying to get your sugar to dissolves a little bit and to get honey warm so it mixes in with the other ingredients.
Let your wet mixture cool then add in your egg. Add this wet mixture to your dry ingredients then toss in your chocolate chips.
Take small handfuls (about 1 heaping teaspoons) of the now sticky mixture and form your truffle balls. Place on a baking dish, no greasing needed. You should get about 20 little balls.
Bake for 10 minutes at 350 Fahrenheit. After baking immediately remove from your hot baking dish and let your balls (>_<) rest and firm up for 10 minutes.
I found that this recipe is really flexible and adapts well to changes, you just need to maintain your basic ratios. For example, I tried a recipe with 3 tsp cocoa powder added, because I increased the dry ingredients I also increased the wet ingredients by adding a tiny bit more honey and 1 1/2 tsp peanut butter. They turned out amazing!! See below.
