Fruit Empanadas

Here is a simple recipe for dessert empanadas. I made these for a potluck with friends. 
Here is what you'll need:
  • 1 package of Goya "Discos para empanadas"- I used the large size.
  • Jam of your choice. I decided to use raspberry.
  • Fresh fruit, I got a pound of strawberries but only used about 1/4 of that.
Step 1:
I like to cute my discs in half so I can have a perfect snack sized treat.
Step 2:
Add jam to one side of the empanada disc, making sure to not add too much otherwise it will seem out. Half of a teaspoon is good.
Step 3:
Slice your strawberries and place them on top of the jam. I used about 1 strawberry per piece.
Step 4:
Fold over your empanada dough in half.

Then with a fork press down along the edges to seal your empanada.

They are ready for baking (or frying)
Step 5:
I lightly greased (I used olive oil) my baking pan and brushed the tops of the empanadas with olive oil.
Step 6:

Bake your empanadas for 10-15 minutes at 350 degrees Fahrenheit then flip them over and bake for another 5-10 minutes. Let them cool for about 10 minutes then enjoy! These are super easy but make you look like a pro!
