My favorite dish this week was my curry. I compared a bunch of recipes I found online to find the basic ingredients then tried it out. I ended up using curry powder, garlic, salt, pepper, coconut milk, greek yogurt, onions, peppers, spinach, and chicken. I honestly didn't measure anything just added what seemed right then adjusted to taste. As long as you heat the curry powder in butter or oil first you're good to go.
One lazy lunch day I just made rice, threw some tuna on top and a little tomato sauce and it was actually delicious!
I eat a lot of rice and bean but lately I'm tired of it. I mixed it up a bit by making simple black beans with quinoa.
